“Biofunctional activities of Bioactive peptides derived from whey protein hydrolysates fermented with LAB (L.helveticus)”Whey represents a rich and heterogeneous mixture of secreted proteins with wide ranging nutritional, biological and food functional attributes. The main constituents are b-lactoglobulin (b-lg), a-lactalbumin (a-la), bovine serum albumin (BSA), immunoglobulins, lactoferrin, glycomacropeptides (GMP) and other minor components. Bovine whey has many biological and physiological functions e.g. immunomodulatory, antimicrobial, anticarcinogen, antihypertensive, mineral absorption and antithrombotic effect due to the production of bioactive peptides that are released by enzymatic proteolysis, gastrointestinal digestion or during fermentation by lactic acid bacteria (LAB) due to its good proteolytic activity. The main bioactive peptides are a-lactorphin, b-lactorphin, lactokinin, b-lactotensin and serorphins.
